Michelin has announced plans to publish a separate guide for Nordic countries in April.
The move signals a recognition that the region remains a hotbed of culinary innovation and haute gastronomy, fuelled by the wild popularity of chef René Redzepi’s Copenhagen restaurant Noma.
Though the restaurant, which has been credited with popularizing the foraging trend worldwide, was named the world’s best restaurant two times by judges at Restaurant magazine, it failed to move from its two-Michelin-star status this year.
